Cinnamon Cake with Icing (or muffins)
Makes: 12 muffins or 9-inch cake
Ingredients:
1 ½ cups flour
½ cup granulated sugar
¼ cup packed brown sugar
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon cinnamon
½ cup milk
½ cup canola oil
½ teaspoon vanilla extract
1 egg, beaten
Directions:
Preheat oven to 350F degrees, and then sift together flour, sugar, brown sugar, sugar, baking powder, salt and cinnamon in a large bowl.
Next combine beaten egg, milk, oil and vanilla extract in a medium bowl, and then add to dry ingredients. Stir just enough to moisten. Really! You don’t want to overwork this batter. The less you fuss with it, the fluffier the cake or muffins will be.
At this point you can either make individual muffins or a 9-inch cake. For muffins, fill tins 2/3 full or place batter into a 9-inch cake pan. Bake for 20 minutes or until a toothpick comes clean from the center.
For optional icing, combine 1/2 cup of powdered sugar and 2-3 tablespoons of milk. You can add more or less milk depending on what consistency you like best.
