My favorite breakfasts on weekday mornings are ones that don’t require much preparation. As much as I hate to admit it, I don’t even want to think about turning on the stove before noon. One way I get around this is by keeping hard-boiled eggs in the refrigerator. Not only do hard-boiled eggs make for a great snack throughout the day, they also work for quick breakfasts.
And this happens to be one of my absolute favorites. I toast a wholewheat piece of bread and then rub a garlic clove across the surface. Then, I slice my hard-boiled egg and spread it out across the toast. I drizzle a little olive oil over the top, and add salt and pepper to taste. I tend to enjoy a piece of fruit with this, too, and today that’s a Fuji apple.
